Easy Peanut Butter Cracker Cookies – No Baking Required!

by Tanna Clark

in Holidays, Kitchen and Dining

I went to a cookie swap last weekend and have one to attend next week. Since Hubby bakes cookies during the holidays (take a peek at last years cookies) I usually just go to visit friends because we already have plenty of cookies in the house. I have a favorite cookie that I like to bring because it is so delicious and so very easy to make. I love sharing this one with my friends because they are always so surprised at how great it tastes.

Easy Peanut Butter Cracker Cookies

Step #1 – Make Peanut Butter Crackers (Ritz is my cracker of choice)

Step #2 - Melt Almond Bark in microwave and dip crackers to cover.

Step #3 – Decorate with sprinkles or leave plain, then put them in the refrigerator to harden.

Approximately 1- 24 oz. package of almond bark per 4 sleeves of Ritz crackers.

So easy you can’t go wrong!

Shaina gave us some great tips on baking cookies for the holidays. This past weekend Hubby held his cookie baking marathon and this is my favorite out of them all! ….

Okay Tanna, these sound very strange but they look so pretty! Does the cracker not go soggy? I think I’m going to give it a try because the no bake idea is right up my alley!

No, they don’t get soggy! The almond bark dries too fast. My grandmother makes these because my grandfather is allergic to chocolate. When I first saw them I thought it was a little weird but then I tried it and OMG! You get the salty and sweet and peanut butter all rolled into one. So YUM!

I went to a cookie exchange last week and someone had made “hamburger cookies”. Two Nilla wafers make the “bun”. One grasshopper make the “burger” and they are held together with red and yellow (or red and green) frosting for “ketchup and mustard (or lettuce)”. No baking and SO fun!

Those peanut butter cookies would be excellent dipped in chocolate!

I would think so, but the good thing is you can try out just enough to cover one cookie to test it out and you won’t be messing up a whole batch of something!

I make these every year for Christmas except I use the chocolate bark. Everyone loves them and they are my husband’s favorite cookie!
